AUTHENTIC FLAVORS & INGREDIENTS – Our non-gmo corn is sourced from family owned businesses and is 100% Non-GMO. The corn is cooked and volcanic stone ground daily by artisans to produce the masa (corn dough) we use to make our tortilla chips.
MI NINA – Tortilleria Mi Niña is the first authentic tortilla bakery in New England that creates tortilla chips from 100% US NON-GMO white corn, lime, and water. We utilize the same techniques used in the Aztec period. We cook whole grain corn with water and lime and we use hand-carved volcanic stones to grind the corn mixture – a process known as Nixtamalization.
